We use Aquaponics to grow our microgreens. There is no soil, no pesticides, no fertilizers and no hydroponic chemicals.
The growing trays sit in our custom built aquaponic NFT growing system.
The environment is completely controlled to include heat, humidity and lighting. All aspects of the environment are optimized for year round growing. Mylar reflective sheeting is used to increase the efficiency of the lighting. Our lights are powered primarily through solar panels, reducing the draw on utilities and the consumption of natural resources.
We use ornamental fish (Koi and Goldfish) to "power" the Aquaponics system. We feed the fish, and in turn the fish feed the plants, and the plants (with a little help from some naturally occurring and helpful bacteria) clean the water and return it back to the fish.
In addition to Koi and Goldfish, each tank is also home to one or two crayfish. This is one of our White Specter crayfish ( his name is Blizzard ) hanging out near an air filter. The crayfish help process some of the solid waste produced by the fish, reducing the need to clean and replace the water on a regular basis. This process helps reduce water usage, allowing for 90% less water than traditional agriculture.
Kinsella Farms uses only restaurant grade containers and utensils when harvesting, and all surfaces and trays are cleaned using approved bleach products, or food grade Hydrogen Peroxide. We deliver our greens within 24 hours of harvesting, but during that short period they are kept cool in a dedicated refrigerator. With over a decade of experience in restaurants and professional kitchens, we wouldn't have it any other way.
We buy the vast majority of our seeds from True Leaf Market, who have been supplying seeds to farms since 1974. We use only non-gmo, heirloom seeds.
Where possible, we deliver using reusable containers. Our customers simply give the container to the delivery person at the next delivery. This applies to both restaurants and subscription delivery customers.
